like me, I’m sure you know that we earned the distinction of celebrating the longest Christmas in the world,(dahil iba mag pasko ang Pinoy).And
I’m also sure that most of you are like me-I consider Christmas my favorite holiday,Christmas may sometimes bring nostalgic moments back,but the overpowering peace and joy lingering in the air overrides sadness this season.
Christmas is about sharing(I’m not gonna preach I promise),that’s why today I’m here to share my latest salad discovery,Ricci one of the nurses at work made a broccoli salad to share on our Thanks giving potluck,I was so enamored with it that I gave it a try,it turned out really really good and I’m sure this is a recipe for keeps.
So common join me,put some holiday music on,don your apron and let’s get this party started:(pardon my photo lighting photos taken at 3:00 in the morning).
1 pound bacon(Ricci’s did not have bacon)
1 large head broccoli
1/3 cup diced red onion
1 cup red grapes cut in half
1 cup celery
1/2 cup slivered almonds,toasted
1/2 cup golden raisin
2 tbsp. green onion or more
1 cup water chest nuts(my version didn’t have this)
1 cup mayonnaise
1/3 cup white sugar
2 tbsp. datu-puti,white vinegar
1.Start by browning the bacon,set aside on paper towel.
2.In a large bowl,combine broccoli,red onion,grapes,celery,almonds,raisins and green onion.
3.In a medium bowl,whisk your mayonnaise,sugar and vinegar.
4.Add the bacon and dressing to the broccoli mixture,toss and refrigerate,I did not even refrigerated my portion,I jut had to fulfill my hunger at 3:00 in the morning,(oh!!! soooo good).
